Cost Control for Industry

Taught by HRM faculty member and Executive Chef John Deflieze, this course is an excellent introduction for restauranteurs, hospitality students, and aspiring chefs. Each module includes learning outcomes, case studies, expert interviews, and mini quizzes to reinforce key concepts. Students will gain insights into essential topics such as Cost of Goods Sold, Budgeting and Inventory Management, Beverage Management, and Labor Costing.

The School of Hotel and Restaurant Management at Northern Arizona University is recognized among the top hospitality schools in the nation, with over 30 years of leadership in the field.

Course Modality: This four-module course will be offered online. It is self-paced and offered asyhchronously. Estimated time to completion is approximately 6 hours.

John F. Deflieze is an Associate Professor of Practice at the School of Hotel and Restaurant Management at Northern Arizona University. He is also the Associate Director of Food and Beverage Operations at the Mesa Workforce Development Center.

Students may withdraw from a course with a full refund up to one week prior to the course start date. There is a 50% administration fee for withdrawals from one week prior to the course start date until the day the course begins. After the course start date, refunds are no longer available.
