Summer 2025 Culinary Training for High School Educators
This 8-hour program is designed for culinary educators to build essential kitchen skills while learning effective teaching strategies. Spread across two days, participants will gain hands-on culinary techniques and practical knowledge on how to teach in a culinary classroom.
Day 1: Culinary Techniques Mastery (4 Hours, 10:00-2:00 PM)
Participants will enhance their skills with knife techniques, butchery, curing, and sauce making. They will learn proper knife handling, breakdown meats, create cured dishes like bacon and gravlax, and master essential sauces such as béchamel and hollandaise.
Day 2: Culinary Teaching & Classroom Management (4 Hours, 10:00-2:00 PM)
The second day focuses on teaching methods, classroom management, and student engagement. Participants will learn strategies for lesson planning, managing a kitchen environment, and maintaining a productive and positive learning atmosphere. The day concludes with a buffet preparation and service, where participants will apply Day 1’s skills by preparing and presenting a meal.

Course Cost: $249.00
John F. Deflieze is an Associate Professor of Practice at the School of Hotel and Restaurant Management at Northern Arizona University. He is also the Associate Director of Food and Beverage Operations at the Mesa Workforce Development Center.

Students may withdraw from a course with a full refund up to one week prior to the course start date. There is a 50% administration fee for withdrawals from one week prior to the course start date until the day the course begins. After the course start date, refunds are no longer available.
